Smoked Plum Soup

Cooking time: 30-60 minutes
Ingredients: 7 smoked plums; 30 pieces of dried hawthorn; 10g liquorice; 10g pericarpium citri reticulatae
Seasoning: 30g rock candy; 1000ml water

Directions:

1. Prepare the ingredients. Clean the four dry ingredients except the rock candy and then soak them in water for 5 minutes.

2. Pour the water, wash the ingredients and then drain the water off. Add clear water and boil it with strong heat.

3. After five minutes of boiling on strong heat, slowly stew them with gentle and medium heat. Skim the floating bubbles with a spoon.

4. About 20 minutes later, shift to the gentle heat. Add rock candy and stew it for 10 minutes before turning off the heat. Set it aside, and it is ready for drinking after cold storage in the refrigerator.

Cooking Tips
The used ingredients are bought in the Chinese medicine store. Pericarpium citri reticulatae shouldn`t be preserved because it is not healthy with sugar and various kinds of additives. Fresh hawthorns are all right.
