Chinese Water Chestnut Fried with Colored Peppers

The water chestnut is actually not a nut at all, but an aquatic vegetable that grows in marshes.  The water chestnut tastes crisp and sweet, containing protein, vitamin, minerals, carbohydrates etc. It has lots of medical effectiveness according to traditional Chinese medicine such as: it can help digest food, reduce fever and phlegm, improve eyesight and dispel the drunkeness, lower blood pressure, cure calculus stone disease.
Chinese Water Chestnut Fried with Colored Peppers
Ingredients:

150g coloured peppers; 250g water chestnut ; 2tbsp olive oil; salt to taste; monosodium glutamate to taste; green onion and ginger

Directions:

1. Soak water chestnuts in water and clean them. Peel off water chestnuts and slice them into pieces.

2. Clean coloured peppers and cut them into fine sections. Add oil into a wok and heat the wok. Add coloured peppers, stir for several times and put them into a plate. Again Add oil into a wok and heat the wok. Add ginger and green onion seasoning until fragrance, then add water chestnuts.

3. Add oil into a wok and heat the wok. Add coloured peppers, stir for several times and put them into a plate. Again Add oil into a wok and heat the wok. Add ginger and green onion seasoning until fragrance, then add water chestnuts.

4. Stir fry for a while, add salt, monosodium glutamate and continue to stir fry for 1 minute. Add coloured peppers and have a stir. After they mix well, place onto a plate. Also switch off the heat.
