When pineapples are added into the dish, the fresh taste can dispel the greasiness, and the sour and sweet taste can stimulate appetite. It is a delicacy either as fruits or dish. In this dish, the meat is not the traditional chine, but the chicken breast, which is rich in vitamin C, E and protein, easily absorbed by human body. The dish is beautiful in color and luster, with red and green colors, and is sweet and sour.

Ingredients: half a piece of chicken breast; half a pineapple; 1 green pepper; 1 pimento
Seasonings: 4tsp of ketchup; 1tsp of light soy sauce; 1tsp of starch; 1tsp of spiced salt; 1tsp of ground pepper; half a whole egg liquid; 4tsp of flour; 2tbsp of oil
1. Remove the peel of the pineapple, cut into pieces and soak in light salty water for 20 minutes. There is a whole pineapple in the picture below. I only used half a pineapple. Clean the chicken breast, cut into slices. Mix evenly with 1tsp of spiced salt and ground pepper, and preserve for 10 minutes.
2. Remove the pedicle and seeds of the green pepper and pimento, clean and cut into slices. Add half a whole egg liquid into the chicken breast, and mix evenly. I used one egg, so there is too much liquid. Half an egg is all right.
3. Mix the ketchup, clean water and light soy sauce, and stir evenly. The proportion of ketchup, clear water and light soy sauce is 4:10:1. Mix the flour and starch evenly. The proportion of flour to starch is 4:1.
4. When the wok is heated, add more oil and heat it to medium hot. Cover the chicken breast with dry flour; put into the wok and deepfry it on gentle heat. When the chicken breast is deepfried to float, take all out.
5. Keep the oil in the wok, and pour the tomato water made in step 3. When the tomato water is boiling, add starch water and boil until it is a little thick. Stir for many times.
6. Add quickly chicken breast, pineapple, green pepper and pimento. Turn off the heat after quickly stir evenly. Put the dish in the plate and take it out.
The pineapple had better be eaten after being soaked in the light salty water for 20 minutes.
