200g preserved meant; 50g dried radish
garlic; red cayenne pepper; 2g chicken essence; 2g salt; 5ml steamed fish soy sauce
1. Wash and clean preserved meat, get rid of outer dirt and grease of the meat. Put preserved meat on a plate. Cover the meat with preserved film in which small holes are pierced. Steam preserved meat for about 30 minutes on high heat. Cut garlic stalk, garlic leaf, red cayenne pepper into fine sections respectively.
2. Slice preserved meat into fine sections. Add water into a pan, boil the water. Then blanch the preserved meat for several minutes until the salt becomes light. Then add oil into a wok, heat the wok, add preserved meat and stir fry until grease comes out. Put preserved meat onto a plate, leave the grease in the wok.
