Scallion Stir Fry Hot Spicy Clams
Ingredients: 400g clams
Seasoning: onion and ginger; dried red pepper; 5ml white wine; 4g hot pepper oil; 4g salt; 4g oil

Directions:

1. Wash and clean clams, infuse clams in salty water for about 2 hours. Slice ginger, garlic into fine stripes. Cut scallion into fine sections.

2. Add water into a wok, then add ginger, white wine and clams. Bring the wok into boiling until clams pen the mouth. Get clams out of the wok. Wash clams respectively three times in clean water.

3. Add oil into a wok, heat the wok. Add ginger, scallion, stir fry until fragrance. Add dried red pepper and stir fry until fragrance.

4. Add clams, stir fry on high heat. Add 1 tbsp white wine and stir fry 30 seconds. Then add 1 tbsp salt, stir fry 2 minutes. Add green onions, switch off the heat, stir fry and mix well. Serve.
