Pumpkin red date soup is my favourite soup among all soups. According to ancient Chinese medicine theories, this recipe has positive effects to those suffering from bronchus asthma.
Pumpkin contains rich vitamin E and beta carotene, so pumpkin has antioxidant, anti-aging effect, and can protect eyesight. As the food source of vitamin A, compared with liver, egg yolk etc., pumpkin is quite economical. Red date contains high vitamins, so it has a good effect on tonifying the blood. Then let me show how to cook delicious soup.
200g pumpkins; 12 red dates; 100g rice wine
Seasoning: 1/2 tbsp red sugar
1. Prepare all the materials including pumpkins, red dates, and rice wine. Wash and clean red dates and infuse them in water for a while.
2. Add water and red dates in a saucepan and bring to boil. Peel off the pumpkins.
3. After cooking red dates for 10 minutes, add pumpkins into the saucepan, and continue to cook. During the cooking process, skimmer off the scum.
4. When boiling, add rice wine and cook for 2 minutes. Then add 1/2 tbsp red sugar into the saucepan. Then bring into boiling and switch off the heat.
Cooking tips: using salt can easily clean red dates. Don’t cook rice wine too long, two minutes is enough otherwise the taste will become a bit sour.
