In hot summer, making a pot of sweet mung beans soup, adding some rock sugar and drinking a large glass could relax oneself. Mung beans soup is one of Chinese drinks to ease hot heat in summer. Mung beans soup can reduce fever and relieve internal heat, quench thirst and relieve sunstroke. There are lots of ways to cook mung beans soup, we can add Semen Coicis, lotus seed or red jujube etc. to cook different flavors of summer drinks.

1. Clean mung beans, and soak them in water for about two hours. Then add mung beans in a cooking pot, add water. The proportion of mung beans to water is 1 to 10.
2. Cook in high heat. After boiling turn to low heat. When mung beans are slightly mashy, switch off the heat. Fill mung beans soup in a bowl, add 1/2 tea spoon of rock sugar. After cooling down, we can eat.
Cooking tips: mung beans are cool-natured. Feeble people shouldn’t eat mung beans soup too much. Mung beans are easy to cook. After soaked in water, they are easily cooked.
