Local people in Guizhou China have a liking of sour food. There is saying that “Don’t eat sour food for three days, gasp when walking”. The sour soup of Guizhou China can be divided into two types: pure sour soup and red sour soup. Pure sour soup is fermented with fresh rice while red sour soup is fermented with tomatoes and peppers. Red sour soup is more densely flavoured than pure sour soup. This sour mutton chop features the sour food culture of Guizhou China well.
300g mutton chops; 150g Guizhou Red Sour; 1tbs oil; salt; ginger; 4 cloves of garlic; onions; broccoli; enoki mushroom; garlic leaves
1. Stew the mutton chops beforehand, cut them into fine sections. Prepare ginger, spring unions and garlic cloves.
2. Add oil into a wok and then heat the wok, add ginger, spring unions and garlic cloves to have a stir fry until the smell. Add Guizhou Red Sour into the wok and have a toss until the smell.
3. Add mutton chops and stir fry until the mutton chops are wrapped with Red Sour. Add hot water.Until the soup is boiling, add some vegetables such as broccoli, soybean sprouts or beancurd.
4. Stew the soup until broccoli is softened, add some enoki mushrooms. At last sprinkle the garlic leaves and have a stir. Place onto a bowl. Serve.
