Bitter gourd, quite like jackfruit, makes some people scramble for it but others avert. However, as a kind of vegetable with high nutrition value, it is rich in abundant protein, cellulose, vitamin C and B, linoleic acid, etc. Among all these, the amount of vitamin C is the highest among all melon vegetables. Bitter gourd has always been called “the gentleman vegetable”, because it is bitter itself, but its bitterness can not be penetrated into other food ingredients. If you make fish, meat or fried shrimp meat with it, it will not be tainted by other flavor.

Ingredients: fresh shrimp; bitter gourd
Seasonings: ginger slice; cooking wine; starch; oil and salt
1. Prepare the raw materials. Remove the head and shell of the fresh shrimp, and then pick out the shrimp thread in the second and the third section with toothpick.
2. Mix the cleaned shrimp meat evenly with salt, ginger slice, cooking wine and starch. Boil the water in a frying pan, add 1 tbsp of salt and several drops of oil, blanch the bitter gourd.
3. Heat the oil in the frying pan and add the preserved shrimp meat, stir fry. When the shrimp meat turns red, add the blanched bitter gourd.
4. Stir fry for a while, add seasonings such as salt. Finally thicken the mixture with cornstarch and water.
