Cooking time: about 10 minutes
Ingredients: 1 round eggplant; 1 handful of green soya beans
Seasoning: 1 egg; 3tbsp of tomato paste; 2tsp of starch; 1tbsp of sugar; 2tsp of salt and 2tbsp of oil;
1. Remove the peel of the round eggplant and cut it into long thin strips. Add 1tsp of salt and preserve it.
2. Then sprinkle a little dry starch and stir evenly. Roll the eggplant covered with dry starch in the salty egg liquid.
3. Add 2tbsp of oil into a pan and heat the pan over high heat. Deep fry the eggplant until both sides of the eggplant are golden and take out for later use. Keep a little oil in the pan, add tomato paste and sugar to stir fry evenly.
4. Then add the green soya beans and a little water, boil and thicken the mixture. Then stir fry the deep fried eggplant strips evenly.
Cooking tips: It would be better to choose the round eggplant. Before deep frying the eggplant, add a little dry starch for the convenience of covering it with egg liquid. Deep fry the eggplant in the pan so the eggplant covered with salty egg liquid can absorb less oil. Add a little oil when frying the tomato paste, so the lycopene is easily absorbed. Finally add some green soya beans to stir fry for decoration.
