Wood ear mushroom is also known as black fungus, black Chinese fungus, wood ear fungus, wood fungus, ear fungus, or tree ear fungus etc. Most wood ear mushrooms have a black brown color and a soft texture. They taste delicious, have rich nutritious components. Wood ear mushrooms have lots of vitamin B, C, and D and protein, contains beta carotene and minerals including selenium, zinc, copper and iron. Ingredients: 15g wood ear mushrooms
Seasonings: 3 pieces of garlic cloves; 10g red chili pepper; 10g green chili pepper; a dozen of Chinese prickly ash; 1 tbsp of white vinegar; 1 slice of ginger; 2tbsp of oil; 1 tbsp of light soy sauce; 1tsp of salt; 1 tsp of sugar; 1tsp chili oil; 1tsp of sesame oil; 1 piece of Chinese parsley
1. Soak the wood ear mushrooms in warm water and add some cornstarch to clean them. After they are well infused, cut the end of wood ear mushrooms. Tear the wood ear mushrooms into small pieces.
2. Add water in a wok and heat it over high heat. Bring to the boiling. Add the wood ear mushrooms in the wok to blanch for about three minutes. Remove, add cold water to clean and then drain.
3. Chop ginger, garlic cloves, Chinese parsley, the green and red chili peppers. Then add 2tbsp of oil in a wok and heat it on high heat. Add Chinese prickly ash, chopped ginger, chopped green and red chili peppers to have a fry until flavor. Then switch off the heat.
4. Put onto a bowl and let it cool. When the mixed seasoning is cool, add chopped garlic cloves, light soy sauce, white vinegar, sugar and sesame oil and Chinese parsley to mix well. Finally sprinkle the seasoning onto the dish.
