In hot summer, people would like to eat crisp cold dressed dishes. For when we cook cold dressed dishes, we don’t need to use fire and here there are less possibilities of smoke. In summer eggplants always have peak production and we can otherwise braise them or stew or fry.

Ingredients: 300g purple eggplants
Seasonings: oil; salt; 2 tablespoon of soy sauce; 1/2 tablespoon of sesame oil; green pepper.
1. Clean purple eggplants and then cut them into fine sections. Steam them in a pan , then set aside.
2. Take green pepper seed out, clean green pepper and cut it into small sections. Put green peppers in a bowl, add 2 tea spoons of soy sauce.
3. Add 1/2 tea spoon of sesame oil. Then sprinkle 1 tea spoon of salt on it.
4. Add hot pepper oil into the bowl, and then mix the seasonings. Put well-mixed seasonings on the eggplants. Then serve.
