This recipe is quite simple and easy to make only using two ingredients. This recipe not only contains lots of nutrients and tonic, but also has a good meaning in Chinese. The golden colour of pumpkin means “gold” in Chinese, the white colour of Chinese yam means “silver”, the water soup means “fortune”. So this recipe together means lots of fortune will come this year.
Ingredients: 500g Chinese yam; 500g pumpkin
Seasoning: water; 50g rock sugar
1. Peel the pumpkin and cut pumpkin into fine slices. Also peel off the Chinese yam, cut into small sections, then infuse in water.
2. Put pumpkin in a micro oven for about 5 minutes’ softening. Then use a spoon to press pumpkin into a mash, add into the soup pan.
3. Add 1 bottle of water and 50g rock sugar. Cook until the soup is slightly boiling. Add Chinese yam. Bring into boiling until Chinese yam becomes tender. Switch off the heat. Serve.
Cooking tips: when we peel off the Chinese yam, the Chinese yam slime flux contains plant alkaloid which can stimulate the skin to itch. So at first we have to infuse Chinese yam with skin in water for 5 minutes, then when we peel off Chinese yam which wouldn’t cause itch. Peeled Chinese yam can be easily oxidized into black. So we have to infuse in water. When we cook, fetch it out. If we want to savour exquisite taste of pumpkin, we can use a mixer to get mashed pumpkin.
