Cooking time: around 10 minutes
Ingredients: 500g baby cucumber or 2 pieces of cucumber
Seasonings: 3 garlic cloves; 3 ginger slices; 2 pieces of green scallions; 2 pieces of red peppers; 5g salt; 2g sugar; 1tsp black sesame oil; 1tbsp mature vinegar, 1tbsp soy sauce; 1tsp of Chinese prickly ash 2tbsp of oil
1. Clean the cucumber and remove both ends. Halve and then bat into strips.
2. Cut the batted cucumber into small sections. Marinate the cucumber in the salty brine for 5 minutes. Then take cucumber out of the brine and set in a bowl.
3. Grate the garlic cloves, ginger, red peppers and green scallions respectively. Add sugar, mature vinegar, soy sauce, black sesame oil, ginger and garlic cloves into the bowl, then mix them well with the cucumber.
4. Add 2tbsp of oil into a wok. Heat the wok and then add red peppers, Chinese prickly ash and green scallions to stir fry until the flavor. Then sprinkle on the cucumber.
