150g peel and eat shrimps; 150g broccoli; 2 tbsp oil; 2 slices of ginger; salt to taste; starch to taste; chicken essence to taste; cooking wine to taste; hoisin sauce to taste; chili powder to taste
1. Clean the peel and eat shrimps and drain them. Then marinate them with cooking wine and starch.
2. Add water in a pot and bring it to the boiling with 3 drops of oil. Add the shrimps and blanch for 1.5 minutes. Don’t blanch too long otherwise shrimps could be tough. Slice the broccoli into fine sections.
3. Blanch it for 5 minutes in oiled boiling water to keep broccoli green and fresh. Heat another wok and add chopped ginger to stir fry until the flavor. switch off the heat. Add broccoli into the wok.
4. Add peel and eat shrimps. Add salt, hoisin sauce, chicken essence, cooking wine, chili powder and mix well. Then serve.
