Black Rice Congee with Adzuki Beans and Red Dates

Black rice is a nutrition powerhouse. This special type of rice is considered to be anti-inflammatory and a great source of antioxidants. It can help reduce the risk of dangerous conditions such as heart disease, heart cancer, high blood pressure, circulation and overall blood health.  Everyday eating some black rice will do good to our health. Also we Chinese people treat red dates not only as a food but also as a health tonic and a traditional herb. Many traditional herbal formulas include dates as they are used for balancing the formula, Qi and blood for the body. It can help deal with insomnia and blood deficiency. Citrus peels have been known for containing high levels of vitamin C,  it can help prevent diabetes, lower risks of heart disease. So this black rice congee with adzuki beans and red dates really does good to women who expect to keep young and healthy.
Black Rice Congee with Adzuki Beans and Red Dates
Ingredients: 80g black rice; 80g adzuki beans; 4 red dates; 1 dry citrus peel

Directions:

1. Wash and clean black rice. If not using a pressure cooker, we had better infuse black rice in water for 3 hours beforehand. Wash red dates and remove the kernels.

2. Clean adzuki beans and then drain. Put black rice, adzuki beans and the cleaned dry citrus peel into a pressure cooker.

3. Add proper water, set the lid, and cook for about 25 minutes. According to personal taste, we may add sugar or salt. But I usually add nothing, just keep the original sweet flavour.
